Mirèio at Raffles Hotel Makati: Luxury Nightlife

Mirèio offers an unobstructed view of the Makati skyline from its dining area on the 9th floor and the terrace located on the 10th floor, accessible via the artfully decorated stairs that leads to the cozy red indoor lounge.


Luxury experiences come at a premium, but that doesn't mean you can't have a piece of it, which is where the terrace at Mirèio makes a good recommendation for those who just need the drinks to make their night.

Fresh and smoked salmon with Granny Smith apples and Dijon mustard cream (Starter 520 PHP or Entree 820 PHP)

We begun our 6-course dinner with a pair of amuse-bouche "mouth amuser" bite-sized hors d'oeuvres representing the nouvelle cuisine movement, which emphasis smaller, more intensely flavoured courses. What's more interesting is the option for an entree-sized portioning.

Roasted duck foie gras, Granny Smith apples and ginger chutney

The highlight of the night is their Roasted Foie gras with its rich, buttery, and delicate texture that feels and taste similar that of to a soft cheese. The naturally sweetened side piece works well as a neutraliser for the next bite. Only a handful of places will have this type of foie gras on their menu, since it requires a lot of skill to prepare.

Chilled zucchini soup with basil and chorizo (420 PHP)

A cold soup designed with Manila's tropical weather in mind, but that's not something to worry about within the walls of Raffles Makati, but this zucchini soup is an ideal refreshing palate cleanser after the rich roasted foie gras.

Grilled Skipjack tuna carrot Mussolini

Although the tuna was over-cooked I was quickly affixed to the complex carrot based foam on the side that was natural sweet and so fine, it's the little details that make the plate.

Slow-cooked oxtail parmentier with black truffle jus and meselun (1,450 PHP)

Oxtail  prepared to a tender texture topped with fine mashed potato, although I would have preferred the oxtail to be sandwiched in between a layer of potato as to not waste that awesome sauce from the meat, it's delicate flavour is the reason why these high-priced "luxury" restaurants exists.

Rum Baba, coconut and lime panacotta, exotic soup, mango and passion fruit sherbet (450 PHP)
